    Hi there
    Looking for some advice on kit Chardonnay. I've started making kits to get familiar with the wine process, and after a successful batch of vintner reserve Chardonnay, I wanted to try the competition to compare, so I started a Beaverdale and Kenridge kit, both 5 gallon batches. The vintner reserve had a higher OG, 1095, compared to 1080 in the others.
    They are all bulk ageing now, but the two lower OG wines seem to lack the tart, punch of the vintner.
    Is this because of the lower final abv......... And can I do anything to the finished wines to give them a bit more of a tart kick.
