  • Gallons Of Honey

    I've had a chat with someone at work who is now my new best friend who asked me today how many gallons of honey I wanted from his bees.
    Once I'd picked my chin up off the floor I said I'd need to seek advice first and get back to him.

    He's offering me the honey that's washed off the combs once he's taken the main bulk off.

    I have several questions:
    1. He asked what SG I want it at, am I right in thinking that he's best giving it to me as undiluted as possible so I can do what I need to with it?
    2. Am I right in thinking that I'll need to strain and Campden it at first to kill off any wild yeasts?
    3. What's my best option for using it assuming it comes diluted?
    4. What recipes would anyone recomend as so far I've only ever made the JMAO, and really don't want to waste such a generous gift.
    5. If I can't use it all in one go, whats the best way to store it? If I'm getting loads of the stuff, I'm more than happy to share with other members.


    All help and suggestions gratefully recieved.

    ooooh!!!!! you lucky girl. I am jealous of course. honey is in it's self void of any bacteria it is how it is handled that will infect the honey. I would check out some of the mead recipes that will suit the type of honey you are being given. hey how do I get to know you just for the honey of course.

      Just pop on over to the Uk, and you can have as much honey as you want honey....

                            what a great gift

                            why not try a few different meads, its a good opportunity to do a little simple comparitive experimental brews. Find out what works best for you and also for your honey supplier of course... gotta keep that good soul happy!

                            i dunno much more about honey than the average person (whatever that is), but i believe most little critters that live in colonies make antibiotics - there is some evidence that the bigger the colony the stronger/more effective the antibiotic. think i read this in new scientist very recently. as has been said already this means its a very good preservative. I'm not sure if antibiotics work on natural yeasts tho as they are not bacteria. Also whatever is used to wash the honey off the combs may not sterile, and the vessels into which it goes may be similar. so i would not rule out a little camden at this stage - for peace of mind - until you can find out for sure if its needed or not.
