Batch one was a complete success, especially, because it fermented completely dry, I sweetened a litre up with a desert spoonful of honey. Delicious. Just like a low alcohol fruity wine!

Batch two is more 'wine-like' because it will be wine rather than cider strength, as follows:

For half a gallon,
1.5l apple juice
330g sugar
Water to 2.25l
Yeast
Nutrient

Here's hoping this will be just as fruityappley as the last lot!
