  • Auld England Marmite Mead

This process will be detailed in the Auld English Mead Tutorial later...I have many wines and meads in progress...so it has to be a mid-stream event here...hope you can pick up comments from the middle. I will try to detail forward and back at the same time.

Marmite mead taste like a Courvoisier "knock-off", we enjoyed some Cognac de Napoleon egg-grog and frostie's during the Holidays. Next year those same recipes will dawn our Marmite Mead. Just mix Courvoisier with egg-nog call it egg-grog, or blend it with ice cream/nutmeg (just a "smidgen" of nutmeg) frostie. Everyone knows a smidgen measure...sure? For those that are rations illiterate, a smidgen is slightly more than a pinch, but less than a splash.

It is not too clear yet, two months old, after first racking...will fine first with isinglass; then bentonite.
