  • Bottle smell

    Hi there. I bulk store my 23 litre kit wines in a 20 litre vinotainer and have only a few litres kept over stored in 3 or 4 bottles. Something I've noticed about the bottles though. When I open a stored (screw cap) bottle to check aroma prior to fridge cooling it smells lovely. After a few hours in the fridge however I smell it again and it smells a bit sulfurous and unpleasant. I know that this will probably dissipate but it's annoying especially if a dinner guest opens it to smell it (one person refused to drink it because of the smell). If I pour a glass or two direct from the vinotainer and refrigerate for 1/2 an hour there is no sulfur smell and it's delicious. I think from now on I'll drink the first few litres from the Vinotainer and fill it back up with the 3 or 4 left over bottles. Has anyone else noticed this happening? It seems to be the rapid cooling in a bottle which causes this and even if left overnight the smell is still there (current batch I'm talking about is a KR Classic Chardonnay aged about 2 months btw....oh and it's lovely too

    I am thinking this do with the chilled temperature suppressing the natural aroma, which would (when warmer) mask the sulphite smell.

    Are you sure you don't have too much sulphite in it?

    Are you using sodium or potassium metabisulphate. I gave up on SM years ago because of odd flavours and pongs? And you never see commercial wino's using it.

      When you say sulfurous do you mean eggy or sulfite-y?
