    We fermented this one with fresh Plum, we will back sweeten with Harvest Times Plum juice. It has a good aroma and flavor...it is acidic, but that is due to the fresh plum. It too will be entered in competition this fall, after aging a few more months in oak. To relieve some of the acid later, I will use gelatin; if necessary afterward, Potassium Bicarbonate.

    Just bottled my winexpert Barolo, It tates mighty fine already.

    It's had 6 months in the carboy from clearing. Vac racked it twice in that time. Put a gallon into half bottles as tasters and the rest into normal 750ml bottles. Had 2 half bottles already!
