    You are not losing any tannins with the addition of oak, you know that. Maybe you should taste it well before 3 months?

          Nothing dude

          just curious, but I would check the oakiness before three months, probably at 6 weeks and then weekly after that, you can always add more, but cant take it out. I find with the Sangiovese two months on 50g per 23 litres is about right for me, although you like more oak than me.

            Well realisticaly I never would have had the patience to leave it 3 months without a little taster, as you've said before go easy at the start and add more if need be is why I only added 30g. But I shall check after a month or so just to be safe. Are you oaking yours and what type ?

                  Well I bottled a gallon of this on Friday, what a great early drinker this is, 6 months old and I drunk 5 of the 6 bottles, ooops, it is smooth with good tannins just about the right oakiness, plenty of body and a fantastic nose of cherries. But I shall refrain from bottling any more untill next year it's just too tempting to drink it.
