It was very nice of Bob to get all the essential equipment for us to use!

Joking aside, I've unloaded the car, the kitchen now looks like a bomb site. Will sort it out in the morning!

Hopefully it'll all be bubbling away when I get up!

I got 10 Gallons near enough of the Monte grapes, in 2 containers, different yeasts in. 4 Gallons of the white Treb, looks like that has started already

Also, 1 tray of Sangi, which I've just thrown in a bucket and given a little squish around. Hopefully this one is going to be my 'organic rich'. No numbers, workings out, yeast type etc, all done as it was way back in old days! Will psot some pics when it does something, currently it looks like some grapes in a tub...

              Numbers on the grapes

Montepulciano (mon-tee-pool-chee-arno.. holding fingers in Italian type gesture while saying it )

              Brix 24 (equivalent to 1.090)
              PH 3.4
              Acid 4.0 Sulphuric 6.5 Tartaric
              whoo hoo

              Trebbiano (Treh-bee-are-no...finger gesture again)

              Brix 22
              Acid 3.5 sulphuric 5.8 tartaric
              PH 3.7

Measuring and adjusting the acid content of your must is vital if you want to produce fine wines. The Trebbiano maybe could have done with 1g/l acid addition, but decided against it as it was still in range.

see this acid chart for acid levels required in your wines, scroll to page 2 different test kits test in slightly different ways, in the UK and France test kits test for Titrateable acid expressed as Sulphuric, in the States test kits normally test for acid expressed as Tartaric.

It doesnt matter which one you use, just as long as you know which acid it tests for (normally in the insttructions)
              Acid chart

In the Tutorial section I will be posting a photo tutorial on how to test for acid content using the Ritchies kit (£5 to £6) available in the UK

              see here

              hope this helps
              regards
              Bob
