I am back from holiday, and the wine seems to be fine. It has calmed down tremendously, and unfortunately, the waiting game has started.

Did you have a good time?

It's the hardest part isnt it......the waiting?

but the waiting and the expectation will enhance the excitement once you are there

            regards

I had an ok time. It was a bit stressful at the end, but otherwise I had a nice time.

The waiting IS difficult. Especially since I'm so impatient for these types of things. But you are so right, once I'm there, it will be absolutely perfect. At least I will try my best for it to be perfect.

But I'm new to the MLF thing. I've added it, now what do I do? (Concerned about the Campden tablet thing - I don't want the geranium smell) I've not added any since starting the fermentation. Let me go to the wine cellar and take an SG reading....

                  YAY
so initial ferment complete, the MLF should take around 4 weeks (ish) depending on conditions.

if you put your ear to the carbuoy you will hear it fizzing, just be careful not to introduce too much O2 (MLF yeasties dont like it) it will smell a little "cheesy" too.

Campden tabs are ok once MLF is done, but potassium sorbate isnt.

                  regards

What problem will adding sorbate cause when mlf has finished ?

Geranium (even if campden tablets are added at the same time)

MLF and pottasium sorbate dont mix! or at least thats my understanding iof the situation.

                        Cheers

I thought the sorbate/mlf bad thang was when you add sorbate to a wine that has not finished mlf or if you start mlf in a wine that contains sorbate.

I think I have confused myself now!
