The weather has turned cold enough for me to cold stabilise. I believe I will put the demi-johns out today, and see how it goes over the course of a few days. I've tasted the wines (other grape ones too), and all seem quite tart.
I will post pictures, and will make a tutorial about cold stabilisation for the forum.
