    Damson liqueur

    3lb ripe damsons
    1kg sugar
    1 litre vodka


    place fruit in mason jar (3 litre jar)
    add sugar
    pour over vodka till jar full and seal top swirl jar to dissolve sugar.


    swirl jar every day to dissolve sugar and release lid to free air pressure that builds up.

    once all sugar dissolves and all air released (about a week to two weeks) age for about 4 months, strain through coffee filters and bottle.
