Ok its going to need topping up shortly. Water or my leftovers from the pear wine? Does it matter if the SG is diff on both wines? I was just thinking when i measured the Sg at the beggining the DJ only had water to its shoulders. Had it been full the SG would be less yes? SO should i have started with a higher SG knowing that i would be adding more water in a few days?

Either is fine. I'd probably top up with a white wine though (store bought).

No, it doesn't matter. The amount you top up the wine with can be considered unimportant. If you use water, you could add a few pinches (up to 2 teaspoons) of sugar. The fermentation will take off (be aware that it could be a volcano), will take longer, but will offer you a trade off, if you have to top up with a lot of fluid. If you do this, please do it outside or in a sink or in a bathtub. Volcanoes.

Yes, you can do it that way. But to make it easy on myself, I'd use a simple cheap white wine to top up with.

2 weeks old and i'm still not sure i can top up. Its still very frothy at the top but i might just sieve it tomorrow and top up being as i'm castle viewing till the middle of next week and the lees are taking over the DJ!
