    I would wait till you have some tartaric acid, follow the recipe to the letter because it's stunning stuff.

            Cut the Lychees in half or in quarters if you want.

                Actualy good advice there by Zeb, otherwise the result will be a metalic taste in your finished wine, I have often had this by not opening the tin, now many may laugh, but, none of the recipes here tell you to open the tin first.

                But seriously there is no seeds or stones in lychees, so do whatever you prefer, mash, chop, blend etc.

                    Roughly chopped (half or quartered) makes it easy when it comes to racking.
