    2 Ltr Apple Juice (Supermarket cartons)
    125 g Dried Elderberries
    1/2 pt Red grape juice concentrate
    1/2 tsp Tannin
    1 tsp tartaric acid
    1 1/2 lb Sugar
    Gervin No. 2 yeast & nutrient
    pectolase

    Wash elderberries and remove damaged fruit.
    Add to sterilised bin,
    Pour on 2 pt cold water.
    Dissolve sugar in 1 pt boiling water and pour into bin.
    Cover and allow to cool.
    Add Apple juice, red grape juice concentrate, acid, tannin, pectolase, and 1 crushed campden tablet.
    Cover and leave for 24 hrs.
    Add yeast & nutrient.
    Cover and ferment on pulp for 3 days, gently stirring twice daily.
    Strain into demijohn.
    Ferment out.
    Rack, fine and filter as normal.
    Sweeten to 1012
    Enjoy

    As Elderberries are now in season what would be the weight of fresh elderberries?

      TBH I dunno.

      Let's hope Sniper, whose recipe this is, will have some idea.

      Edit: Just googled the question and apparently 80-90% of weight is lost during the drying process. I'll let you do the maths

              I went out and picked about a kilo before work on Friday, spent an hour on a park bench separating the berries from the stalks. I was going to pick another load after work today, but it's been pissing it down all day so I don't think I'll bother.

              Seeing as this recipe was originally posted in the "Best wine you've ever made" thread I reckon I should give it ago

                I have just started 5 gallons of this off....
                Althougth, I have used apples that I was given in Sepetember/October time, from the freezer, instead of the carton juice.
                Hopefully, it will turn out to be a good un

                  Stuck on sweetening

                  The ferment has just finished on my 5 gallons of what I hope is a lovely wine and the final SG was 0.994. I've just added some vinclear to help clear the wine, but was wondering, in the recipe it mentions to sweeten to 1012, I've bought some wine sweetener but I'm a bit stuck on how much to add, I would hate to ruin this wine. Any help would be great.

                    Be very careful as this stuff is powerful. Add only a couple of drops at a time. If you're good at working out proportions, draw off some of the wine, carefully sweeten until happy and then adjust the amount for the bulk.

                    However I expect that one of our experts will give you better advice than me so it might be best to wait for them.
