    Sg 1.006, time to press! I ended up with 5 1/2 gallons plus the gallon of Rose, a bit less cack handedness and I would have got the other half gallon. Good practice for the main event though.

              Mine are fermenting in the winery at slightly cooler temps, checked SG this morning and it was 1.020 so pressing on Friday I'm thinking, and it looks like I may get around 15 gallons from 12 boxes

                    Don't you just love it when a plan comes together, everything into secondary ready to start again.

                    Went out to the shed (winery) to check on progress and decided to have a taste. Me thinks that it's gonna be gooood stuff, very fruity and no harshness. Not a massive amount of gross lees so far (there was loads from the Monte'). If it lasts long enough I will take a bottle to Grapefest 2009.

                      The red is at 0.994 and the rose is 1.002, both taste pretty good. The rose is more of a pinky colour, I might drop a little of the red into it when I rack.

                        Colour is one of the things that are hard to keep just right on a Rose' wine some even go salmon colour must be the lack of something reds get from the skins I think

                          Just racked the Ciliguilio, the batch size is now 5 gallons and 2 pints of red and the gallon of rose. I added some of the red to the rose to deepen the colour a bit, both taste fab.

                            I bottled the Ciliguilio Rose' today, three bottles left dry and three sweetened to medium, cracking stuff.
