  • Elderberry & Blackcurrant

    Ingredients:
    225g Dried Elderberries
    4 tins 300g Blackcurrants
    245g Red Grape Juice Concentrate
    2 Bananas
    1½lb Sugar
    ½ tsp Tannin
    1 tsp Tartaric Acid
    Gervin yeast
    Yeast nutrient
    Pectolase

    Method
    Sterilize all equipment.
    Put blackcurrants in bin, wash and add elderberries, then crush fruit.
    Dissolve sugar in 2pts of boiling water, and add to bin.
    Simmer bananas with acid in 2 pts of water for 30 mins in covered pan.
    Allow to cool then strain liquor into bin.
    Add 2 pts of cold water, stir well, cover and allow to cool.
    Stir in the concentrate, tannin, pectolase, and 1 crushed campden tablet.
    Cover and leave for 24 hrs.
    Add yeast and nutrient.
    Ferment on pulp for 3 days, stirring twice daily.
    Strain into demijohn.
    Ferment out.
    Rack, fine and filter as normal

    you're a bu99er with those excellent sounding "dark fruit" recipes.

    That's another one I'm gonna have to see if I can track down some ingredients for

    p.s. I've been "taxing" one of our "night trunk drivers" to see where he and his wife go for a good range of "Polish" groceries, so I can try and find, what was it?, Bilberries and Blackcurrants (PEK or other brand).

        Hi Sniper,

        How does this wine turn out? I have a few kilos of elderberries and a few kilos of blackcurrants in my freezer so i may give this a go. It sounds almost port like

        Should I use the same amount of blackcurrants from my freezer as the tinned ones in your recipe?I was thinking of 1kg elderberries and 1Kg blackcurrants + the other ingredients in your list.

          It is a slurping social wine to be enjoyed..........anytime
          You should keep to same ratios, or the balance goes to pot.
          225g of dried elderberries = 900g fresh
          4 x 300g cans = 450g approx fruit as rest is syrup.
          SO !!!!!!!!!!
          Use approx 900g of fresh elderberries to approx 450g blackcurrants.

            thanks for the info Sniper. i will give it a go shortly

            I will add it to my list of wines to try which currently inlcudes blackberry or eldeberry and apple.
