    I am going to bottle my dried elderberry wine this sunday. It's finally degassed, and it tastes pretty good. A wine No. 1 is also ready to be bottled, as is a melomel. Busy busy busy!

    Too bad there aren't any comps in Germany!

          They've long finished down here.

          The "water trick" mentioned earlier is good as all the green ones and the ones that have turned black but are still a little under ripe float and you can just strain 'em off with a tea strainer.

            I was shocked and stunned, when we drove past them yesterday...
            Then I started jumping about like a maniac

            I have about 2kg's in my freezer already..
            So, this will ramp up production a tad

              I ended up with around 12Kg this year

              going to use the last lot today (3kg) with blackberries I (my folks) picked this year (7kg)

              tweaked slightly with 2 litres of Barolo concentrate - Mmmm should be interesting.

              On another point to note, when picking the Elderberries (I got them from work as it is private land - you can only gain access with a security pass, thus leaving my Elderberries protected just for me) I noted that there are grapevines all around the perimeter fence! very smal fruit thi year but I am intrigued to see what will be produced when we have a good summer

                Started destalking tonight....
                I think I will be doing this for a few hours
                It seems to take forever... I have just spent an hour doing it, and only had 500grams done ... That was only half a bag full, so I have another 7 or 8 more of those to go.
                Good job I dont have to get up early tomorrow

                      I recently attended a talk on juice extraction, the guy who gave the talk is a member on here (Colin Tweed). Anyway, he explained his various methods of juice extraction which included quite a bit on elderberries. When he picks them, he uses an afro comb to remove the berries straight from the bush into a bucket. I was wondering if you could try a similar method.

                        The two years that i have collected elderberries i have taken the full florret at the time of picking and collected them in Black bin bags. Leaving them in the bags for a few days before removing the fruit from the stalk.

                        They are so easy to remove they just come away in your finger.

                        This year it was straight into the steam juicer and done.

                        I personally could not stand on the road side and pick berries.

                          I am using the "fork in a big bowl of water" method

                          I only have 2 and a quarter bags still to do

                          If I had the space to do it, they would have been straight into the fermenter, but I dont... so I need to get them into the freezer first.

                              The other day, i was going through my garage to look for some spare DJ`s and came across a DJ full of Elderberry & Plum that i made 2 years ago. i had forgotting all about it! So i tried a glass and was amazed at how good it was! I bottled up five bottles and enjoed the rest myself.
                              Gonna try and put away at leat 2 bottles of it and see how well it matures.
