    Cool! I just found 3 lbs of plums in the freezer as I was tidying them out this afternoon - I was wondering what to do with them, so thanks! you've solved my dilemma.

    Can you remember the recipe you used?

      Sorry i cant remember the full recipe, but i know i added plenty of pectolase in, and i might of even used some blackberrys too. I`m sure someone on here with better knowledge will help you out.

            Ah......

            I thought you meant the crushing and processing part.....you mean seperating berries from stalks

            well...what I do when picking the Elderberries is use either rubber gloves or those gloves from petrol stations, and rub the elderberry heads, so that I dont remove any of (or very few of) the stalks, this way they are easy peasy to process on arrival home (into the steam juicer, and a few stalks dont matter) its a little more work whilst picking, but a heck of a lot easier than stood over a sink with a fork!

              Bob - I know it will vary, but have you worked out what weight of berries you need for a gallon of must? When we talked about it, it seemed considerably more than for traditional methods.

              I've just been for a walk and found a couple of bushes still laden with big, ripe berries. I'll be going back out in a while with gloves and a plastic bag

                Around 6lb of berries (varies from tree to tree) will give you around 1 litre pure juice...use this for 1 gallon must ...with all the usual adjuncts and additives of course, and sugar to 1.080, it will be very rich in elderberry flavour indeed.

                  the above is for steam juicing in case anyone was confused....if using fresh berries then 4lb to a gallon of must.

                      I fancy doing a nice heavy, sweet(ish) port. Has anyone tried this recipe?

                                Finally finished de-stalking my elderberries...
                                I think I have about 7kg in totoal.. will have to double check tomorrow..
                                But, I think that enough to keep me busy for a while

                                I also fancy trying a port stlye one.
