    The reason will be the type of fining they have in the kit. The lees are probably necessary to form the blanket that grabs the negative and positive particles on the way down. There is a process call surdelees I hope the spelling is at least close. This process involves gently stirring the lees over a period of time this has the effect of changing the mouth feel of a wine.

        Battonage or sur lee ageing is done to give a buttery sort of texture to the mouthfeel, this is something that I intend to try in the future. Using Biolees is supposed to give the same effect but I haven't seen it on sale anywhere in the UK.

          I have read on this technique some and you need to make sure to use a wine that is topped up in a glass fermenter as this takes a while and you don't want to oxidize doing the procedure. From the reading I have done you stir once a week for four months to achieve optimum mouth feel and flavor. also the stirring is done with a lifting motion gently as not to introduce oxygen.Not for the rushed or the kit brewer either, this needs to be done on scratch wines.

              Right, the Cab Sauv is in the primary now, with its original EC-1118 yeast (well in date).

              As Rich said, the packaging is a bit austere, but I suppose it's the quality of the ingredients which count. We shall see . Starting SG is 1.098 - it smells (and tastes) great.

              The Chardonnay will go on later - I forgot to take a fresh pack of D47 out of the fridge (the original was best before Sept 07), so I need to give it a couple of hours to warm up.

                ... and the Cab Sauv has fermented out already

                Currently degassing etc, but it tastes very nice already. Absolutely NO eggs in this one

                  I would personally advise that putting eggs in your wine is not a good idea, Pete, I suggest you try grape juice or something simular.

                    I haven't had the space to start the kits I bought...
                    But a bit of a sort around and a bottling frenzy the other night, means I can start one of these today....
                    Will be starting the Pinot Noir later on
