    I just sneaked a taste of the Cab Sauv. Considering it is still in the carboy, waiting to fully clear, it tastes very promising

      Most of the Chardonnay is bottled. At the moment it smells and tastes quite perfumed, but I'm going to exercise patience and leave it for a while.

              Well, the best laid plans, and all that

              I genuinely opened a bottle by mistake - I thought it was a Beaverdale Chardonnay I bottled 4 months ago, but by the time I realised it was a Heron Bay Chardonnay the cork was already out.

              No, really

              I'm impressed. It is young and it has only been in the bottle three weeks, but it's great - tropical tasting (I think ripe pineapple). I think it is going to be great after a few more months.

              I wish I'd bought one or two more now.

                I opened a bottle of the Cab Sauv - just to check it is OK

                I think this kit is definitely designed to be aged, but it is really promising already. Now, all I have to do is resist the temptation to open another for a few months

                  I finally got round to bottling this the other night, after it has been bulk aging for a few months.

                  I really like it.
                  I wish I had bought more at the price
                  Insecure people try to make you feel smaller.

                      The Cab Sauv is 18 months old now.

                      It has improved further.

                      Still a soft, fruity wine, smooth tannins. Probably not up to the standard of an equivalently priced WinExpert kit, but excellent value at the price we all got them for.

                      I'll update you on the Chardonnay the next time I open one.
