  • Californian White - Beaverdale Kit

    I'm about to start a 6 bottle kit (I'm trying to find a good one before going for 30 bottles).

    All Beaverdale kits seem to have a generic instruction sheet. Oak is always optional, and I think I'll leave it out for this one.

    The Cali White is a nice drop, I would chuck the oak in but that's my preference.

      I'm really pleased with this one.

      I waited two whole weeks before giving in and opening a bottle.

      A bit citrussy, a bit spicy, and a bit something else which I can't explain (because I'm useless at identifying smells and tastes). This is only going to get better too.

      I think I might do a 5 gal kit.

        Progress report after 4-ish months in the bottle.

        It has improved - fruitier now. Nice clean tasting wine.

              Just bottled another gallon batch (Rich, I actually FILTERED this one).

              There was a bit left over, and amazingly it was very drinkable straight out of the DJ.

              I know it isn't the most economical way of doing it, but I think I'll continue buying 6 bottle kits and keeping a production line going. It means I have decent white on hand, without occupying lots of space or requiring a major operation to bottle it
