    Mrs. Goldseal's 3rd wine.

    This was a 6 bottle kit, similar to price and quality to Beaverdale. Nice, clear instructions, straightforward for a novice.

    Unfortunately Mrs.G didn't follow them, and missed the 1.010 racking - it was already down to 0.995 when she checked

    We decided to let it fement out, then rack. This doesn't appear to have adversely affected it, despit it sitting on quite a lot of lees for a couple of weeks.

    It was bought to be early-drinking plonk, so we opened a bottle after a month. Nice, strawberry nose, dry, quite acidic, but lacking a bit of flavour at the moment.

    We'll open another one in a month and update here.

    One month (and a bit) later ...

    A BIG improvement. The fruit flavours are starting to come through now - a really decent rosé, doesn't seem as acidic as I remember.

    This is going on the 'must make again' list.
