  • Beaverdale Muscadet

    This is the 30 bottle wine kit bought for my birthday last month mentioned elsewhere.

    Bottled my first six bottles today, had a glassful left over, tasted beautiful , a little sharp but definitely looking forward to later tastings.

    I bought a 5 gallon fermenting bin and a heater belt to try to ensure a good result, these worked marvelously. Wine bubbled away, sounded as though there was an air block in the central heating.

    I racked it into five demi-johns, didn't see the point of paying £18 for a PET 5 gallon jar for what may be a one off 30 bottle ferment. Then filtered one demi-john three days ago and bottled today. So I have 4 demi-johns put away for a few months ( I hope ) .

    Sounds good. That's one I've not tried. You'll have to post a follow up tasting review after it's aged a bit!

    I too would be miffed at paying £18 for a 5 gallon pet container, when Duff sells them at £14.50

      Sweetened one demi-john yesterday, couldn't resist a test taste, it still had a little edge to it but should be better for Christmas.

      I will sweeten the last 3 dj's this weekend and put them away for safe? keeping? I have put question marks because I don't know how safe it will be nor how long it will be kept.

        I've just started this one today: no adjustments to yeast, etc. Looking forward to posting further on this one.

          Started this on using a Gervin D yeast Will let you know how it turns out.
          Life would be better if I could brew it as fast as we drink it!

            Just bumping this thread.

            How did yours turn out? I've not touched mine sine racking. Still bulk aging 5 gallons in the shed!

              Strange you should ask. I've just had my outlook message saying it's been in the bottles 3 months so I'll give one a try this week end and let you know what it's like.
              Life would be better if I could brew it as fast as we drink it!

                Nope needs more time! No nose and still just a hint of kit jaminess Beaverdale kits sometimes have this but if left for longer it will eventually disappear into insignificance. However at 3 months it's very very good. If this was one of my first kits I'd be drinking it now! But I've got plenty of wine number one to go at and I am allowed to be fussy so I can wait.
                So as a comparison with commercial Muscadet the taste is fine just as you would expect a little acidic but a little crisper than expected so I’m giving it another month and that should soften it a little to be more like the better commercial wines.

                Just opened another bottle it's fabulous softened out very well and just in time for my mates (who asked me to make a Muscadet for him) party in 4 weeks time he's over the moon about it having tried a bottle on Sunday. Nice fresh dry wine but it leaves a very slight sweetness/softness as an after taste on the tongue.
