Got the elderberries back from GF and started this off:
6 Litres of Elderberry juice/pulp
2 Litres of white grape juice
2 Kg of sugar soln
2 Litres of water (to take the down from 1.110 to 1.092 ) your tip about fermcalc came about 30 minutes to late for me Steve lol.
Measured the acid content and it came out at 6 so I'm going to ramp it up to 7 TA. Seems to taste pretty nice.
In the end I got about 13 Litres of juice which should be nice once I punt in some Gervin G2 yeast. Of course, there is a ery high chance it will taste like bottom.
*EDIT* Rechecked the acid level using a pH probe. Came out at 4.8 TA tartaric. Going to need an awful lot of acid to bump it up to 7.
