  • Dave's Cascade Ale (Summer Ale) from Grapefest 2010

As promised, here's the recipe for my Cascade Summer Ale (although its good enough to drink all year round) that went down rather well at Grapefest!

    Cascade Summer Ale: 23L (5 Gallons) @ 1.049 O.G (5% ABV Approx)

    90 Minute Mash.
Grain Bill: 5 KG Pale Malt (Maris Otter)
    0.5KG Wheat Malt

    90 Minute Boil.
*Note - Schedule based on Cascade hops at 7.6%AA. Adjust 1st loading accordingly*

    90 Mins - 40g Cascade (aiming for 35-38 BU's)
15 Mins - 20g Cascade (plus Whirlfloc/Protofloc or Irish Moss at this Point)
    Flameout - 40g Cascade 1/2 hour steep at 80 degrees C

    Yeast: Safale S04.

    Enjoy

    Dave

If you can make all grain I strongly suggest you make this. A fantastic light and refreshing ale. Very more-ish.
