      Mixed tinned concoction.

      Here we go in the new water bottle d/j just picked this up today, holds 4 gal, bubbling away like an indian after a spicy curry, but with a better smell. Only time will tell with this adventure.

        Update on tinned concoction

        Well what a beauty this turned into, and 25 bottles for less than a tenner, it tastes clean and crisp lightly fruity it reminds me of Blossom Hill California white. . This also has a real fast turnaround time: six days in primary, five days in d/j finished at 995. A little light in colour but great to drink straight away allthough four bottles to cellar to mature, think I'll try one every three months and try to remember to update.

              I live on Castleford road so me and my few neighbours decided last year to call it Casvegas and it stuck not that we do much gambling or the national grid bends at the knees to keep the lights going, lol. just a little fun.

                      Top notch Duffbeer!

                      I am about to stabilise my third batch of tinned fruit wine tonight. I am having great success with this style, in fact, I tasted my tinned peach & apricot last night and think it could be the best wine I have made to date! Incredibly well balanced, lovely fresh acidity, not toooooooo dry. I will age it around 4 months in DJ and at least six months in bottle before I get stuck in.

                      My tinned strawberry has become a lovely 'blush' wine, smells and tastes wonderful.

                        Hey all, I never knew that ya all could be so found of tinned wine. I have used the tinned berry wine especially for fruit wines and also the apricot tinned fruit fruit wine base (which I had to throw out because I over did the sulphite concentration and never could after trying all kinds of things to try and get the fermentation started). I use the 100% juice concentrates to add body in a number of my wines and I have now notice that there is a 100 % juice concentrate of wild berries - blackberries and raspberries - it is a terrific juice at least for my taste?? come to think of it I bet this wild berry juice concentrate would make a good wine or maybe as a body builder for the fall blends???!!!                           Bob, is this right? 3 tsp pectalase for one gallon? That seems like a lot.

                          For example Fruit cocktail is method A

                          For 1 gallon (4.54 litres)
                          all measurements are UK imperial

                          1 15oz tin fruit cocktail
                          2 1/4 lbs sugar
                          1 teaspoon cutric acid
                          1 tspoon tannin
                          3 teaspoons pectolase
                          1 vitamn B1 tablet (or yeast energiser)
                          General purpose yeast
                          Water to 1 Gallon

                            Re checked the recipe and yup 3 tsp is what it says, sometimes a lot of pectolase is needed (for example my plum wine needed 6 tsp before it cleared)
                            Also the method used employs hot water and this always requires at least double the dose of pectolase.

                                Wow, I didnt realise that it could take so much . Maybe that is why my grapefruit wine wont clear. Hmmm.
