What coating should go on the bare wood, to stop the juice getting absorbed in to it?

Obviously it should be food grade, but a varnish or oil or what?

Varnish I'd have thought....... because while the oil should work, there's always the possibility that the oil, only penetrating the surface, will still leave some of the pores of the wood open and once it's started taking up some juice it'd only be a matter of time before you'd get nasties building up.......

Whereas with a food grade varnish type product, a couple of coats, some light sanding in between etc etc should give the wood a water proofed, plasticised i.e. sealed coating. Any knocks/chips etc are easily remedied.
