Having done some water tests, I decided to stick with tap water, but to remove some of the hardness and chlorine I have boiled the day before brewing.
I know I am in a hard water area, but I was amazed at the calcium sediment in the boiler.
To such an extent, I plan to rack the water into the mash tun !!
It is a shame I am doing the flying saazer recipe - it would have been nice to compare the finished product this to a previously made ale - to see if it makes a difference.
