              • Well, it's no grape-pressing adventure as you ahve had, but you have inspired me. I have bought some (minor amounts) grape juice from a local winery in my area. I am reading with awe and interest as to what you will do with your grapes. In a small way, it's my "vicariously living through you" to make a grape wine.

                • Well after testing the acid was as I suspected quite low 4 g/l (tartaric)

                  so added 3 grams per litre to take it to 7 g/l (a more acceptable level by adding 276 grams tartaric acid (its a 96 litre batch)

                  Added the acid in (3) doses of 96 grams a time and tested after vigorous stirring, my calculations were correct as It ended up at 7 g/l

                      • My carafe 21 kit is in for a good pressing tomorrow too! Still on nights, so hopefuly won't be asleep all day. Didn't get time today, but this afternoon the cap hadn't reformed.

                        The 10litres of sugar water in the other lot of monte skins is still going well, with a really thick cap on it, getting punched down 3 times a day or so.

                        Only getting a slight amount of agro for the buckets in the dining room now.

                            • 2nd Run both pressed, just settling out the gross lees before going in a carbouy tomorrow. (carafe21 kit tastes good too )

                              1st Run looking good in 6.5 demijohns.

                              Trebbiano is reading .990 (will check it tomorrow in case I rushed it!) yikes! still quite cloudy reading up on making sparkly wine with it now, and cleaning up those champagne bottles tonight (thanks Bob!) Might even make some sort of upside down bottle holding rack tonight if I get time.
