I have changed my plan - still 17 boxes, but a different combination.

Acid a teeny bit high at 8 g/l measured as tartatric..

                              so.....

bled off 1 gallon juice (nice rose colour and 8 g/l will be fine for a rose once its been sweetened to medium) then added 1 gallon sugar syrup @ SG 1.080...re-tested acid....comes out at 6.5 g/l....happy puppy

could also have just calculated it thus:

                              8 g/l X 23 = 184 g acid total

removed 1 gal so 152 g acid left in 4 gallons... added 1 gal sugar syrup which contained no acid to take volume back to 23 litre, containing 152g acid = 6.6 g/l (152 div by 23 =6.6)

When we get ours on the 25th they will have had a bit more "hang time" and so sugars should be higher, and acids lower
