Sangiovese is a grape I have had a little success with (best in show 2007) but find difficult to produce repeatable results, this is, I think, more a fermentation management issue, sangiovese needing (I feel) a bit more TLC as well as attention to nutrient and yeast needs, than other varieties during fermentation. So yeast choice is more critical than some varietals, the award winning version was made with Lalvin RC-212, and the ferment went through some strange smelling phases, and needs staged nutrient additions to make good wine.....is it worth the extra effort?....sure if you want a chianti style, then you need a sangiovese base

    I think this year will be the year of wine making books for Christmas. I know I know what those words mean, but I'm not sure about what they mean in that order.

    I used the RC-212 last year (and I probably will again this year TBH) and it as very successful (at least when I had a sneaky sip when I oaked the Merl

    I keep meaning to read up on the staged neutrients thing. I basically added a teaspoon or so whenever it started to smell odd. Which was often.

    I really need to make an effort this year to understand winemaking a bit better!

      sorry to be a pain but after reading more can i change my order to
      6 granacha
      6 cilligorlo
      5 merlot (if not avail then sangiovese)

          PDF Updated.

          Payments seem to be coming through next day - although there is a couple I haven't seen yet.

          The wagon is 1/2 full now, 200 cases is about the limit.

              Apologies Brian...can i be a pain and slightly change my order too...now that there is Cilliegiolo available.

              If poss can i change it to -

              14 x Ciliegiolo(2nd -Garnacha)
              7 x Merlot (Second Choice - Garnacha)


              If not, i'll stick with the original order and consult the oracles about how to deal with Sangiovese (as it appears to need a little nuturing to make a good wine)
