I cant see any reason why not, take the basic tinned wine recipe and replasce the sugar with honey to S.G. 1.080N.G.W.B.J.

The good thing about making the melomels, cysers, pyments etc is that it isn't necessary to worry too much about the "quality" of the honey i.e. cheapo supermarket stuff should do as the honey isn't going to be the main flavour.......
