I didn't include the recipe as it's already sitting in the mead recipes section, but hell if you can stitch the posts together and include the recipe as well, then you'd have a ready made tutorial to put up.
Entirely your choice. If you need to edit the text, well go ahead.

Well Daw is new to being a mod, he has the capabilities but hasnt used the software before, so I'll do whatever you need me to, but for now I added the recipe tothe first thread and move it to tutorial section and made it sticky, I will remove the superfluous posts at the end, it isnt locked John, so you can alter it, i will lock it once you are done.
just give me a shout if you need anything else

Quick question - is there any difference in the type of honey (set or clear)?
Think I'll buy some honey at the market tomorrow and give this recipe a try :-)
I prefer to spend the extra and buy from the beekeeper; it may have some wax and pollen crud but it won't have the pesticide residues common in Chinese/Vietnamese/etc honey.

Only because now it's fermenting it's gonna take a good few weeks, so when it's stopped bubbling I'll check the SG and then I can add some posts about racking etc - I'm undecided whether the basic tutorial needs to go any further than just getting it racked/cleared and then just ready for bulk ageing.
I'd guess that if you can unlock "it", I could just as easily continue it as a new thread and then PM you to move the new posts to the end of it - whichever you think is best Bob.

Any questions abiout the mead tutorials please post them here, so it keeps the tutorial s clean..
i have locked the tutorial John, let me know when you are ready to add stuff, and ill either unlock it, or as you say, start a new thread and i can move the posts over.

Simon -- For sure the type of honey that you use makes a great difference. Honey purchased at most grocery stores has been processed to improve its shelf life and pasteurized. It has thereby lost much of its original varietals and aromas. If possible I would suggest that you get the honey from a bee farm, meadery or occasionally the bee farmers sell at farmers markets. There may also be some on line resources for honey direct from a honey farm near your location. Cheers DAW

The supermarket retail stuff will have been filtered, de-watered and pasturised - Oh and invariably it's the cheapest - which is handy for experiments.
The darker more strongly flavoured the honey, the darker/strongly flavoured the mead.
There does seem to be a bigger variation on which yeast is chosen as well i.e. Champagne yeasts often ferment to dry, but when first off the lees and post first racking, you often find it has a medicinal taste to it - the mead would need to age e.g. brew it, rack it (maybe a couple of times), when clear age it - bulk ageing in a DJ will be less affected by temperature variations etc (and yes I bulk age all of mine).
Depends on which part of Sussex you're in, but if you PM me I could arrange for a couple of different yeasts for you to try (got a couple of different Lalvin's and Redstar as well that I ordered from the States). S'up to you.

p.s. Oh and yes, ditto about getting honey direct from the bee keeper, but it's not always that easy to track them down i.e. well one where the bees have collected from one specific type of foliage.
