Berry's 'First steps' will give you the basics and it has been updated a little. However, e-bay is a good place to look for wine books. I got most of mine from there.
I've made beetroot wine but I'm not keen. Its got a very earthy taste and looses its colour easily, going a muddy brown. I was warned but went ahead anyway - won't bother again. Its much nicer cooked.
Beware CJJ Berry - its far too out of date. Sugar levels are usually far too high . It was written in the days of bakers yeast and a liking for sweet wines. Treat yourself to something more up to date.

I'm a first year winer who likes to take and make odd ball combinations(kinda like country wine)doesn't really taste good or bad but gets the job done...my feeling is that any one can make good wine from a kit but only pros can make wine from water.. and thats my goal!! just kidding but you will get alot of replies from me, Right, wrong, or you know different. I will try and maybe get it wrong but just tell me and I'll listen!! I saw a great bumper sticker I got at Barry's homebrew store in Philadelphia,Pa. US that read Press me.. sqeeze me.. make me wine.. Bob Z or just Z
