I was at some point hoping to make an all grape juice wine, and so purchased the above as it is said to metabolise up to 35% of the malic acid in solution. Therefore would using this yeast and making wine #1 without citric acid and with 2 / 3 litres of red or white (or mixed) grape juice make a good wine, or am I going mental?
