Ah, well this evening is more "suspect" mead, though I'm just having a go at a mead/apple wine blend.
Both are CJJ recipes, both made with high alcohol yeasts (the apple with Youngs and the mead with ec-1118).
The "CJJ apple" is the one with very high fruit that "First Steps" describes as having a "Cidery Bouquet".
It did originally, but the mead tempered it some.
After 5 months bulk ageing, it's produced a nice dessert apple wine with a hint of honey - but as I've got 3 gallons of it, it'll be 1 for drinkies 2 for modification or whatever.

Sounds good! My Treb is now bottled, post cold stabilising, and final clearing! The Petit verdot is down to 1.050, should be in secondary early next week.

I have just got the baby to sleep (took me about an hour) the wifes gone out on the razz so ive just put a full meat pizza in the oven (the wifes a veggie) ive got the open fire lit and and ive just opened a magnum ultimate blush im running out of wine fast i really need to start upping my wine making to try and keep up
