Yes, it's Rubicon. The green bits, very small, look like crocodile eyes breaking the surface of the water.

I've scooped the green bits out. They don't appeared to have multiplied yet - fingers crossed - but I will be keeping a close eye.
You're right about the foam Pete. The yeast is tearing into the wine and the cap of the foam was pretty solid - almost like a skin on a rice pudding.
I've given it a darn good stir and will see if any more nasties appear later.
If I do end up using 2 campden tablets per gallon, will that affect the yeast? If so, will it require another starter?
