  • racked and sulphited my merlot and sangiovese from November.

    Racked another 60litres of sangiovese off the gross lees and monitored MLF

    punch down the cap on the latest merlot batch (daily)

      • Had some fun turning a piece of oak wine barrel into staves which will fit into a DJ or carbouy. I tried toasting some in the oven (good results) and some with a blowlamp (variable results).

        Plenty of racking and tasting too.

              Seriously though, racked a Wine No.1 and noticed that the K1-V116 seems to be clearing fast in KoY (I'll measure the SG when sober).

              In other news the winery is currently occupied with praying the missus doens't twig why I'm making room for something roughly 5 Gallons in shape in the homebrew corner.

              (Apparently it's easier to ask forgiveness that permission)

              • Just about to transfer some filtered wine number 1 into wine bags
                Then will rack / degass my strawberry wine
                I still have loads of bottling to do
                I hope to get this done over the weekend ish

                • Just racked my strawberry...
                  It was a wine number one with tinned strawberry added...
                  But the strawberries were added at the begining
                  There is a slight hint of strawberry... but on reflection, I should have added it later on in the ferment
                  Ah well.... at least I know for next time

                  • Spritzer, I have just finished a tinned strawberry, very similar to a Wine No.1. It was the first time I tried adding the strawberries late. The difference is dramatic - intense flavour and colour. In fact, I'm considering halving the amount of fruit next time!

                      From my freezer!

                      It was part of the grab-a-grape load from cellar rat last autumn.

                      I crushed, destemmed and then froze about half a tonne of Sangiovese and Merlot for future use.

                      I'm trying to make all the wine now to clear the freezer out for my own grapes from the vineyard this year.

                          I guess I was just in a rush that day.
                          3 tins, in a 3 gallon batch. I am not sure if thats enough or not

                          • I used 2 tins in a gallon. I think this is about right if you add at the start, but I'm going to try 1 or 1.5 tins per gallon next time I try the late addition.

                              either that or just use Cjjjjjjjjjjjjjjjjj's recipe for tinned strawb, but hold the sugar a bit.....

                              that comes out with a hell of a lot more than a "hint" of the tinned strawberry.......

                                Well, what I added at the start was never going to give off any strawberry flavour then
