    I have been reading a fascinating book on wild yeast & fermented food. The real deal I want to try fermented meat but that still makes me shiver.

    Anyway I have discovered fermented porridge. Just like a normal porridge, but a day later. Very nice

    A microwave safe bowl, some oats, some milk, 1/2 tsp and honey or sugar. (whatever your normal recipe is)
    Mix it up fresh the day before, leave it out at room temperature stir occasionally if you happened to pass it.
    Cook in the microwave as normal, the day after.

    Oh my word - what a difference

      Good point Pete.

      Really nice, really creamy.

      From a texture point of view it takes away any grittiness, and tastes richer - like it's probably got half a pint of cream in it.

        It's got me thinking about pre-fermenting grains for bread making.
