  • Elderflower cordial

    I know I know, I should be making wine from them.

    However, I need to make something for the teetotaller ppl.

    Any advice on a cracking cordial would be good. Thanks

    there is a recipe in the wine section i think

    You can add the cordial as a sweetener to wine no1 to take it to medium, ive taken a few prizes that way

          This is a great tasting, really easy elderflower cordial recipe:
          30 heads of elderflowers in a large bowl
          Boil 1.5L water in a pan, add 1kg sugar and stir till dissolved (take off the heat).
          Grate the rind from 4 lemons (unwaxed) into the large bowl with the flower heads
          Sliced the lemons, add to the large bowl
          Put citric acid in the water, stirring well
          Pour hot water mixture over the flower and lemon mixture
          Cover and leave to steep for 48 hours
          Strain and pour into sterilised bottles or freeze in plastic bags.

          (The citric acid is essential for the flavour but can be added right at the end before bottling)

            You need to be careful to only use floral smelling elderflowers and none that smell of cat pee (some do)
