I had an ok time. It was a bit stressful at the end, but otherwise I had a nice time.
The waiting IS difficult. Especially since I'm so impatient for these types of things. But you are so right, once I'm there, it will be absolutely perfect. At least I will try my best for it to be perfect.
But I'm new to the MLF thing. I've added it, now what do I do? (Concerned about the Campden tablet thing - I don't want the geranium smell) I've not added any since starting the fermentation. Let me go to the wine cellar and take an SG reading....

so initial ferment complete, the MLF should take around 4 weeks (ish) depending on conditions.
if you put your ear to the carbuoy you will hear it fizzing, just be careful not to introduce too much O2 (MLF yeasties dont like it) it will smell a little "cheesy" too.
Campden tabs are ok once MLF is done, but potassium sorbate isnt.

What problem will adding sorbate cause when mlf has finished ?

Oh yea me n Bob regularly slog it out at footy, trouble is he's often injured and has to take a few weeks off, nevermind though we manage without him...only just though... he's a great goalkeeper... aren't ya Bob.......
