The scarves were because it dropped a bit chilly, I didn't want them to catch cold

its almost like looking at my own brewing collection (also with an annexe under the stairs), except for the uber wine rack you have! Similar number of DJ's, similar number of empties (but all with planned brews in mind to fill them), some with card coats (lack of brown DJ's - i have 6 - for better preserving red's colours), and a single 1/2 gallon DJ! hmmm i'll stop being brewing nerdy now

I know, I need to find me a supply of brown DJs, there are 3 half gal DJs in the picture though I shall be making my way through the 4th tonight (it needs emptying of the cider)

As far as I am aware, brown DJs aren't made any more, so you'll have to keep an eye out on Freecycle and/or Ebay for them.

If you're ever in the Grantham area I've got a few brown ones to give away...

I'm not usually, however, a special trip can be made if you're available at a weekend?

nice one going for the Green tea & Ginger
did you go with the recipe from Keller's website, if so did you tweak the amount ginger to suit your tastes? I'd love to know what you make of this come drinking time, we love it especially with a curry.

should be an interesting beverage. I did, i put in 2 oz of ginger and more sultanas. Can't remember what the SG was off hand. Think i added a bit more sugar though. Not much more as i don't want it OTT.

i'm really not at all sure what the green tea lends to the wine (i used japanese bancha) but as its a hit with us i'm not gonna drop that. Like you i will probably add a little extra ginger next time, maybe more raisins/sultanas/grape concentrate too. i'll also be sticking to sauternes yeast. i'm quite excited about comparing thoughts with you .... but dammit patience is called for!
