          If you can manage to leave it for 2 months, it gets even better!

          I do quite a few of the Beaverdale kits, but mainly make the 5 gallon ones so that at least some bottles survive to age a bit!!!!

          So far I've make a Barolo, Cabernet Sauvignon, Rioja & Merlot and I have a 1 gallon of Gwurztraminer and a 5 gallon Californian Red waiting to be done.

                I have made the Rioja a few times and it's not worth drinking untill it's more than 2 months old. However, the last batch I made with the various tweaks was good to go right away and keeps getting better. It is the best Beaverdale kit that I have made to date.

                  I have just started another Barolo kit, this time with about 3 or 4lb Grenache skins, frozen after Grapefest.

                    A Beaverdale Barolo came second at the National show in the kit red dry class, can't be bad then.

                      I've just cracked open a bottle of this (bottled 22/09/2008). Its bloody great. Smooth and fruity. I tried it at 3 months and its definitely changed alot for the better. My mate even likes it and he isn't a fan of reds at all. I'll definitely be getting another of these on asap.

                          What a fantastic kit and a great wine one of the nicest red wines from a kit .

                          Now just have to have the patience to let it mature 25 bottles left!

                              Had a couple of glasses of this earlier, i bottled it in June 2009, good stuff! Tastes like a much more expensive wine.
