is it possible to freeze elderflowers and rose petals for later use as at the moment i have no demijohns free but there are lots of flowers about and i dont want to miss them

Whilst I can't say for certain, I'd think that Bob's suggestion is best as I understand that the only way of freezing flowers and retaining all of the various volatile elements i.e. aroma, oils, flavours, etc is to "flash freeze".
Lots of ways of doing that, but it would probably easiest if granda knows someone who has access to liquid nitrogen. Then it's just a case of dipping the flower heads into it and then carefully flaking the petals/stamens or whatever off the stalk and keeping them frozen.
A syrup/cordial is probably far more practical.Women will never be equal to men until they can walk down the street with a bald head and a beer gut, and still think they are sexy.
