Here's what the spec sheet says for Australian Galaxy:

      >>The Australian hop variety Galaxy is a high alpha dual purpose seedless cultivar with a marked and unique hop aroma. Bred by Hop Products Australia and currently grown in Victoria and Tasmania. Galaxy, when added late in the boil, has been found to impart a unique and pleasant flavour to beer. The striking flavour has been described as a combination of citrus and passionfruit, whilst still contributing significant bittering. Alpha range 13.5 - 14.8%.<<

christ on a bike 14.8% Alpha acid?????

The cynic in me thinks their using a 14% AA Hop because they can get a lot of bittering for a little hop. On the other hand, the bulk of me is thinking

              Got a plan...

My normal OSH recipe is ....

              M.Otter 3800
              sugar T&L 570
              Crystal 380
              black malt 24

              Hoppage (key bit)
              Challenger 40 (@ start for 90 mins)
              Golding 10 (@ 10 Mins)

What about swapping the 40g Challenger for 30g of Galaxy ? and stick with the golding as is?
