      caps of skins removed, placed in another fermenter and juice racked onto them, leaving seeds behind (is how I do it)

      makwes a softer, earlier drinking wine.

            They're both still clearing (this is after 5 months) but I'll back sweeten them before I bottle them, probably to about 1015.

            I'm still hoping they may be ready for Xmas or New Year as I began them in May, but I'm not holding my breath.

                          • Right got the mead going on Saturday but not a quick ferment not as active as i would of thought used a D47 yeast as i would like it to be a little bit dry then again none of my wines recently have been very active i think that its due to the cold weather. Just topped it up today no pics can't get the bloody camera to work darn digital things you need a degree to work some of them. will try again later and have put in storage will keep a check on it .

                            • On Its Way

                              I started some mead at the weekend. It's bubbling away nicely. I opted for wine yeast in the end, since my preference is for a drier wine. I'll see how it goes, and sweeten if necessary at the end of the process. I still need to get some pics up. I'm free this weekend so I'll try and pull off an arty shot of my DJs
