    Could I conclude that a DJ of wine is stable when the air in the airlock evens out?

    I'd have thought so, would be a good idea to check to see if the SG moves to be very sure that its finished if you need peace of mind.

      No

      The only thang you can tell from a motionless airlock is that not as much CO2 is going up through it.

      Confirm a finished fermentation by getting the same SG reading from your hydrometer several days apart. Stabilize the wine with sorbate and sulphite. The wine is stable then when degassed.

        cool

        the sg was stable for 4 days before I racked and S&S'd it and nothing has happened for while (and its cleared a bit too)

        just wanted to check I was on the right lines
