    Very happy now.

    The air lock is going at once ever 20 seconds and fermentation seems to be back under way. Thank you all for the advice. I felt like ditching this wine and starting again but I'm so much more pleased to have this going again. I won, lol

    I hope that the messing around with this wine doesn't spoil the taste.

    Thanks once again for all the advice and lesson learned on my part. Campden tablets when it's finished fermenting

            Now I have a new issue with this wine. There is something floating in it.

            It looks like something has curdled in it. Is that bad or is it just yeast? I can't post a photo but will do tomorrow.

              Does it seem to be fermenting still ? Keep topped up as much as possible. I wouldn't worry about it as long as it is still fermenting. When it stops or goes dry, you can rack and sock the K-Meta to it. It will be fine.

                    From what I can make out that just looks like clumps of solids. As the wine ferments out the clumps will sink and become the lees.

                    I had a wine, pear I think, that looked like curdled milk at one stage but it was fine in the end so don't worry.

                          It's fizzing away like there was never a problem. Should be ready for rack and start clearing soon. yay!!

                            Just as a point here, do not rack again until ferment is completely finished, let the yeasties do their thing

                              Don't worry. I wont but it's close to being fermented down to dry, it was 1.009 when I checked this morning. Will wait until it's down to 0.996 or less but that should only be a few days... i think

                                Heck, it might go to .992 this time. Hope so. Like I said, keep topped up as much as the ferment will allow, up to an inch from bottom of airlock. (2.5 cm, I think)
