    Hey up folks, I just went to check my blackberry that is clearing and it is clearing lovely. I decided to take a whiff to see if I could smell any co2 in and the wine itself smells fine, but the bung is definitely infected. as it smells very vinegary. It is rubber so I can sterilise it again but should I chuck in a campden tablet too? The must had one and the gallon had one added at first racking.

    I would rack off sediment into another sanitized jug in which you have added a crushed and dissolved campden tablet in a little of the wine. Sanitize the bung and airlock very well and replace. Be sure the jug is topped up well.

    This is all precaution, of course, I am not saying your have the vinegar bacteria.
