  • Burn taste in wine

    I have been mixing a red wine that was too sweet and not a very good taste. I refermented it and add a few odds of wine that were a bit on the dry side. I now have a very nice red wine Sg 1000 good flavour tastes of blackcherry with a hint of pepper. There is a slight burn sensation at the back of the throat just after swollowing. Never had this before not sure if I like it, Any ideas as to why this burn senation is there and can I get rid of it. Any help PLEASE

    The burn sensation could be just the rawness of a young wine, and it may subside given time

      What is the final ABV after all that mixing and how young is the wine? It sounds as if you have a 'hot' alcohol effect there. This may mature out in time, but it may also be too high an ABV.

        It was made in febuary first off it got down to sg 1000 about three weeks ago, so its very young so I think I will leave it for a year and see what it turns out like. thanks
